[Umekoji Potel Kyoto places great importance on the selection of ingredients and gentle seasoning. The restaurant often visits the producers to select ingredients, and procures a wide variety of local products such as Milky Queen rice from Tango, Kyoto, and eggs from Miyama. The fish is grilled over charcoal in front of your eyes to lock in the flavor and plumpness, and a variety of pickles from Gion Kawakatsu, a long-established restaurant established in 1930, are also available to enjoy as an accompaniment to the glutinous Milky Queen rice.
