We start with a refreshing hamaguri clam soup, followed by Kobe beef carpaccio garnished with caviar and green onion, and the otoro aburi with freshly grated wasabi. The unagi shira yaki, paired with Dom Perignon, highlights the simple yet profound flavors of plain-grilled eel. The dobin mushi course, featuring matsutake mushrooms and rockfish, is a seasonal delight.

A standout dish is the 15-year-old Japanese abalone with a rich sea urchin and miso sauce. The Kobe beef katsu sando, served with premium Italian wine, offers a melt-in-your-mouth experience. Additional courses include smoked bonito, monkfish liver, and various sushi, all prepared with the finest ingredients sourced directly from Japan.

For dessert, we enjoy a combination of Japanese melon, crown melon jelly, and yogurt mousse, accompanied by Japanese brown rice tea to cleanse the palate.

Reflecting on this extraordinary fine dining experience, I appreciate the simplicity and quality of Japanese cuisine, with ingredients flown directly from Japan. This omakase at TakaHisa is a true testament to the art of Japanese dining.
