I’ve tried a bunch of recipes but it never turns out like this and I think I just don’t know what to search for

    Shsiozake or shiosake may be the word you are looking for. I love this recipe from No Recipes; I make it regularly with fresh salmon under the broiler or grilled. The small amount of mirin helps make those caramelized edges

  2. Parchment paper on the pan and cook it, but first use cooking mirin or sake and salt for seasoning

    Looks like shioyaki (salt grilling).

    What recipes have you tried that haven’t gone well, and how have they not been what you were wanting?

    It might be miso marinated and then grilled. Lots of recipes for salmon and black cod. Some marinate for 24 to 48 hours!

    Shiozake. I make it a couple times a week. I first prep a whole fillet of sockeye and freeze the portions for ease of cooking. I cure for 2 days.
