Shsiozake or shiosake may be the word you are looking for. I love this recipe from No Recipes; I make it regularly with fresh salmon under the broiler or grilled. The small amount of mirin helps make those caramelized edges [Broiled Breakfast Salmon](https://norecipes.com/japanese-breakfast-salmon/)

Looks like shioyaki (salt grilling).
What recipes have you tried that haven’t gone well, and how have they not been what you were wanting?

It might be miso marinated and then grilled. Lots of recipes for salmon and black cod. Some marinate for 24 to 48 hours!

It’s hard to tell from only the picture, but it could be [saikyoyaki](https://www.justonecookbook.com/black-cod-with-miso/) with salmon, in addition to shioyaki as the other comments mentioned.
Shiozake. I make it a couple times a week. I first prep a whole fillet of sockeye and freeze the portions for ease of cooking. I cure for 2 days.
