He wasn't disrespectful to the Sushi place and got permission to film. Japan is a beautiful place which Kurt takes a lot of time and effort to show us.   15. There is no need to wear gloves for making true sushi.
    It can not feel sensitive holding level of rice if it put on his gloves.
    And also Sushi consists of trust between chef and guests.
    No gloves, that is proof to trust.
    Of course, Needless to say that is very clean.
