That tofu is called Goma (sesame) tofu. There is no soy in it. Just grounded sesame, water with arrowroot like powder that gives it that gooey mouthfeel.

私が子供の時は夕食の準備が面倒な時は鰻は出前でいつも祖母が頼んでくれてたくらい安かったのに、今や何かのお祝いの時しか鰻丼が食べれません😢日本人にも高価になりました。国産の鰻は特に。
