I’ve been away from Trinidad and Tobago for a while now, and I had a craving for some doubles! Come with me as I head to a Miami-area Trini restaurant with a friend so she can try doubles for the first time!

Doubles are a staple in Trinidad and Tobago. They consist of a fried, doughy flatbread called bara, which they top with chana (chickpeas), along with various chutneys and sauces like tamarind and chadon beni. Most doubles are vegetarian, but some variations add meat as well! My friend Diana has never tried them before, so I decided to bring her along!

TABANKA – A TRINI KITCHEN: Here, Diana and I had a massive Trini lunch that included doubles, bake and shark, aloo pies, roti, macaroni pie, dal puri, curry goat, dal, pumpkin, spinach, and potatoes. We finished with homemade coconut ice cream and rum raisin ice cream!

  3. David you keep asking if its curry first or after, this is like asking a pakistani if he's indian, so being trini it will always and forever be curry first. Glad you love our food bro. I was to tell you a while now i feel you eating doubles wrong, how i eat it is different in the sense that i use the first bara and mix up the channa and the sauces on the next, to me mixing it up allows the spread to be consistent so now you can use the same first bara and take up like you usually do and eat, in this way the second bara has channa and sauces incorporated together, what i always see you doing is taking the first bara and grabbing the channa and sauces from the second, the sauces are always on top the channa so when you grab some channa the chances is that most of the sauces will be in this first bara as well, this means the second bara would only have channa and no sauces, hope you understand my way of eating it. I feel whoever show you how to eat it the first time didnt do you justice and i feel i know who it is. Try it one day and see if it makes any different to you.

  8. David, doubles and aloo pie are things that you can customize to your liking but it doesn't click in your head for some reason although you have had soo many before 😂 and you can't handle pepper at all; you getting there tho so keep on practicing 👍
