Ramen Nagi, a popular ramen chain in Japan with 35 locations in Asia, was founded in 2004 by chef Satoshi Ikuta in the city of Fukuoka. Diners can customize the level of salt, oil, garlic, the density of the broth, the firmness of the noodle, the types of meat and the toppings in each bowl using an Omotenashi sheet.

Chef Satoshi Ikuta
Nagi was founded in 2004 by Mr. Satoshi Ikuta at the age of 27. Chef Ikuta, who had trained for over a decade in various classic Hakata ramen shops, began with the practice known as ‘aida kari’, borrowing bar space one day a week to run a guerrilla ramen shop. With his rebellious spirit, Ikuta made a name for himself by first winning a contest for a spot in Tokyo’s famous Tachikawa Ramen Square (noodle theme park). He quickly followed with a successful shop in Shibuya and then Shinjuku Golden Gai. There are now over 35 locations around the world.
According to Ikuta, there are three steps to eating the ramen. First, taste the broth. Second, spread around a dollop of spicy “Nagi fire sauce” to enjoy with the noodles. Third, enjoy with the noodles. Slurp loudly to show the chef your appreciation.
