Visitors to Hokkaido will be in for a treat as Hokkaido has its own version of ramen, a popular soup noodle dish originating in China. Ramen is famous throughout Japan and certain regions have their own specialty ramen soup. Hokkaido, due to its large size, has not one but three distinct, “original” Hokkaido ramen soup flavors.
Sapporo is known for its miso based broth. Toppings of Sapporo ramen include sweet corn, butter, bean sprouts, finely chopped pork, and garlic, and sometimes local seafood such as scallop, squid and crab. Hakodate has a salt based broth with roast pork, scallions, bamboo, nori, spinach, fish cake (naruto) toppings. And Asahikawa’s ramen soup is soy sauce based. With a layer of lard on the top of the soup to keep the warmth of the soup safely sealed, topping of Asahikawa ramen besides lard include roast pork, scallions, and bamboo shoots.
Visitors can find numerous ramen shops throughout the city, along major roads, at the train stations. For a large “collection” of ramen shops, visitors can visit the Ramen Village in Asahikawa or Ramen Yokocho in Sapporo. The Ramen Republic in Sapporo is also a popular place to enjoy ramen.
