If you missed last week’s video our youtube buddies @JitsIntoTheSunset have been staying with us. In this week’s video we take them out on the sea, with 3 dogs in tow! We visit a sea cave and stop at Laurito beach.
Chef Tommaso is back (he’s been working hard all summer at a hotel) and comes over to cook for us.
We get to have a look inside Jits, Tania and Adams home on wheels and talk about what life is like living in a van.

Pasta Piselli for 4 pax
1 chopped onion
1 tin of peas or 1 cup of frozen peas
400g short tube pasta
1 cup of Parmigiano reggiano, grated (mix with pecorino, hard goats cheese if you want)
Swap out the cheese for chopped toasted cashews if vegan

Using a large saucepan rather than a frying pan, fry the onion in olive oil until blonde.
Add the peas and a dash of water, let cook until soft.
Take out a scoopful of peas from the pan and puree with a handful of the grated cheese (or cashews) and add a bit of water to loosen it up. You want a sauce texture rather than mash potato texture!
Add the pasta to the pan and add boiling salted water to cover the pasta. Stir and let the pasta cook as per packet instructions. Add more water if it gets a bit dry but don’t add too much as you don’t want a watery sauce.
When the pasta is al dente add the pureed sauce to the pan and mix.
Top with grated cheese or cashews. Serve and enjoy!
