You made a mistake. In the video, the technique of Yubiki (Scalding) the fish skin with hot water, is not being done on Sayori/Needlefish.
Sorry. But a "Master", has cooked rice enough times (especially in his own kitchen), that he knows how not to burn the rice.
The part where the text on screen, talks about filleting anago… it's not anago. That is Sayori/Needlefish.
If saucing something like Maguro/Tuna nigiri, you should either use a bottle to carefully apply droplets of sauce onto the fish, or apply with a brush or sauce the fish before adding to the rice.
If you simply pour sauce onto the fish the it is being done in the video, the sauce will get onto the rice underneath and can cause it to fall apart when picked up.
Not a "master" from what I see. More knowledgeable and skilled than many, but not a master.
"Suduchi" is actually spelled "SUDACHI".
The uni that is topped with the seaweed and soya paste is called Nori no Tsukudani.
