I love Colby cheese! I'm from Michigan so Colby-Jack cheese is everywhere and it's one of my favorites. It's not easy to find in Ontario where their orange and white marbled cheese is Marble Cheddar. Second favorite is Muenster, and that is also not easily found here. I guess cheese really is such a cultural thing.
Ironically the true American cheese. What cracks me up is that we didn't even invent plastic cheese
