It’s crazy how fast they break down the fish, avoiding the puncturing of the guts and all, where the toxins lie. You can tell this chef has been preparing this his whole life
As a chef currently shadowing my mentor to become certified to prepare torafugu it takes not only ridiculous knife skills, but also muscle memory to safely prepare the stuff. One wrong nick and you could potentially endanger someone's life, but when done properly and safely its one of the finest sashimi fish you can eat.

I love the way Japanese people prepare their food
I'm just amazed at how well and how quick he can cook this fish
How can something that needs to be done so carefully and delicately be done that fast? Mad skills.
