EXTREME street food in Turkey. Today we got to experience some extreme street food here in Turkey, witnessing the preparation and cooking of kuyu kokoreç, lamb intestines, in a special underground oven.

The street food in Izmir, Turkey, is extremely delicious, and one of the most popular late-night snacks is kokoreç. Kokoreç is made of both the large and small intestines of lamb, wrapped around a spit and roasted until juicy on the inside and crispy on the outside.

One of the more unique and extreme ways of cooking kokoreç is in a well, or underground oven. In this way many kokoreç can be cooked at once, making for some extreme street food.

We were lucky enough to get invited to watch the whole extreme process of the cooking of kuyu kokoreç offsite in the underground ovens. Afterwards we headed to the shop, Kuyu Kokoreç, to get a taste of this extremely special kokoreç and see how a kokoreç shop is run, here in Izmir, Turkey.
