We cannot do justice documenting Japan’s cuisine without covering the major source of seafood in Tokyo and the rest of Japan – the Tsuikiji Fish Market.
The Tsukiji Market (築地市場 Tsukiji shijō) is the biggest wholesale fish and seafood market in the world and also one of the largest wholesale food markets of any kind.
In the first video of this series, we visit a stall where flash frozen tuna are being cut and deboned. Whole tuna is cut into four quarters lengthwise using a large bandsaw, and then manually deboned with a special tool. An incredible sight!

Even the highly graded metal Mesh Butcher's Glove can't protect his fingers.
The way he is bending forward & pushing the those big pieces is not the right way. He must wear an army grade helmet too, if it saves his head
