I visited Rome about 5 years ago and the best food we had was in Trastevere. Also, the Capuchin crypts was a great historical tour if you have a chance to see it!
Many restaurants (and some other businesses) make a fine start but then suffer what you describe, falling victim to their own success and popularity; it’s sad. More than a few succumb to it, and end up closing—“dead from too much love”.
Jessi & Alessio, may I ask a question? I’m familiar with authentic recipes for carbonara and cacio e pepe. But what are the only ingredients in an authentic Roman amatriciana? I see so many differing versions, even from so-called “experts.” Thank you. 🙏🏻
3 pasta dishes? Um, you missed the most underrated one; Pasta Alla Gricia. I just came back from Rome last month where I had the best version at Da Enzo al 29. Soooo good. So much more flavourful than Cacio e Pepe, and a nice alternative if you dont want egg or tomato sauce. La Gricia is a Rome staple guys. And Da Enzo was by far our best meal in Rome, definitely worth the wait! Every restaurant is allowed an off night, we went to Nanarello the night before (highly recommended) and my Amatriciana was soupy and soft like Chef-Boyardee. Give Da Enzo another chance. Also Best Tiramisu.

Yummmm. A local shop in Martina Franca has burrata affumicata, and it is glorious on tomato focaccia. What made the burrata you tried so different?
If you have the menu in english it's already a turist trap. Believe me…..a classic trattoria is where the romans go.

Interesting. When you two do reviews of restaurants in Italy, you're either posting over-the-top glowing reviews or being very careful not to hurt anyone's feelings by giving very measured, mixed reviews. Much different than the vicious take downs you do of restaurants in America.

Since you are both honest with your comments, I have to say something out of kindness: I think that, when you get back, you need to abandon the American food reviews/junk food. Alessio is looking rather ash grey colored with, what I call, "the Italian Shadows" under the eyes…you might need a dietary break & detox…😮…just an honest observation out of concern..👍
OMG, I love Carbonara. It’s my death row meal.
They don’t make Carbonara very often in places in the US because there’s this idea that because you don’t actually cook the eggs through (even though it cooks in the noodles) that it’s a health hazard. Most Americans don’t know Carbonara at all.
It’s sad to wait in a line like that and not be incredibly happy with your meal.
Whenever I make pasta I always use whole-grain pasta because I’m a diabetic. All that pasta made from Refined flours cause huge spikes in insulin and get absorbed quickly, which causes problems.
52 Euros for appetizer and 2 pasta mains. This is why I now go to Greece instead. For that 4 can eat and drink happily on a Greek island.

No way I'm paying 12 euros for a super simple pasta dish in a restaurant. I can do the same for less then 3 euros a person at home.
