Misen (味仙) is an absolute must try for ramen heads and regular people alike, if you are visiting the city of Nagoya. Their Taiwan ramen has been a category creating dish of “Taiwan style” ramen, which curiously have not much to do with any dishes served in Taiwan, or at least there is no direct equivalent there.
Taiwan ramen features a broth made from chicken bones, topped with minced meat that has been fried with plenty of hot and numbing peppers, as well as garlic chives.

There is a really awesome family-owned Ramen Shop near where you just went (Imaike Station, Nagoya). It served the best Tsukemen I ever had in Japan 🤤
