Tokugawacho Josui Honten is one of the highest ranked ramen shops in Nagoya and has been that way for quite some time.
When you get to the shop, you can easily see that it’s not only loved by the reviewers, but also by the locals. Long lines form in front and inside of the shop, which move quite fast due to the spacious size of the shop and the fast working kitchen.
Their most popular items are their shio and shoyu ramen, which use a quite niboshi heavy classic chukasoba style broth as base. But the menu is quite extensive and you see many people going for their Taiwan style ramen and tsukemen, as well as the shirunashi tantanmen. All of them looked excellent and warrant making multiple trips to Josui to try all of their ramen.
