I was invited to a Hitoyoshi 5 Star Resturant to try their amazing famous Soba. The owner and head chef gave us a personal tour of the preperation area and the entire process from beginning to end. I have never enjoyed Soba until Today! It was very warm in the prep area, he told us that he is usually doing it before the sun comes up! It didn’t matter I was impressed with his patience and technique! I highly recommend it if you ever visit Hitoyoshi! It is only 10 minutes by walking from the front of the Station! Amazing food!
