You can’t talk about ramen in Tokyo without talking Ramen Jiro. This tonkotsu ramen place is dividing the ramen community in Jiro lovers and Jiro haters. Jiro has an almost cult like following called Jirorians (ジロリアン) with websites and facebook groups dedicated to sharing everything that is to know about Jiro-kei ramen.

Of course, make sure to check out Cody’s ramen review website Ramen Guide Japan:

Some things to consider when you go and eat at a Jiro Ramen place, doesn’t matter if it is in Shinjuku or not. There are some unspoken rules and ways how to order.
First off, you should know that you can’t order any drinks at most (all?) Ramen Jiro’s. If you want to drink something other than water, you should bring your own drink or buy an oolong tea from the vending machine, which you will find in front of the store.
Normally, you will find a line in front of the stores. Buy a ticket, once you are within the next 5-10 people to be seated. Usually you will see when the person in front of you gets a ticket, after that it is your turn.
In this Ramen Jiro in Shinjuku specifically, you should be aware that you need to take your own water glass and spoon BEFORE you sit down.
Once it is your turn to sit down, hand over your ticket to the ramen chef. They will start with the preparation and get back to you, once they reach the moment to put toppings on the bowl.

That’s when you will get asked “ninniku wa?”
At this point, get extra toppings by saying:
Yasai = Vegetables
Ninniku = Garlic
Seabura = Pork backfat
Karame = Spicy

Adjust the amount of topping by adding:
nashi = without
sukuname = less than normal
mashi = a lot
mashimashi = a truckload

  1. Thanks to Cody from Ramenguidejapan.com for joining me for this one! He is the best resource for all your ramen reviews to prepare your personal ramen trip to Tokyo. If you want me to visit a specific store in the future and make a video about it, let me know here in the comments!

  2. I highly reccomen yaen kaido2. If you ever happen to be in Kyoto or Sapporo, their Jiro's are also really good

  3. The real life “Soup Nazi”! Just seeing a customer get service refused and kicked out for not following the store’s rules is a spectacle in itself. The soup size is unforgiving, but damn is it delicious.
