In this episode, we’re back in the birthplace of the Renaissance: Florence, Italy. And we’ve hired a local guide to take us on a walking food tour around the place that Forbes calls the most beautiful city in the world.

Gamberini is a traditional pasticceria, where you’d typically enjoy a breakfast that consists of a pastry and a cappuccino. Around here, cappuccini are typically only a morning drink because of the amount of milk in them. Later in the day, it’s customary to have an espresso instead.

Cioccolateria Ballerini is really another full-fledged pastry shop with all these cakes, cookies and breads, but we’re just here to sample these incredible chocolate confections.

Marble paper-making is a process essentially identical to hydro-dipping of today. It basically consists of putting layers of creatively-applied paint on a liquid surface, creating unusual patterns in that paint using specialized tools, and then carefully placing a sheet of paper on top so that the pattern transfers to it.

Mercato Centrale is the largest of Florence’s indoor/outdoor markets. Inside, these vendors are selling all sorts of traditional Tuscan ingredients, meats and cheeses, fresh and dried pastas, and even complete meals. In the northern corner is the seafood area where we have all this seafood that’s wild caught in Italy or imported. There’s also a lot of fruits and vegetables, nuts and spices, and even a true food court on the upper level.

  5. That type of paper marbling is called ebru, from the 15th century in turkey. It’s all over Turkey and still done today.
