In this video, I prepare & cook a lush Spicy Tomato Soup before moving onto this weeks exercise regime.

The following is the recipe for you to try at your leisure:
Ingredients:
• 12 ripe tomatoes (on the Vine)
• 2 tbsp virgin olive oil or coconut oil
• 2 large onions (peeled & diced)
• 4-6 large garlic cloves (chopped / sliced small)
• 10 fresh basil leaves, chopped (1 tsp dried basil if no fresh)
• 1 small carrot (grated)
• ½ pint vegetable stock (oxo cube)
• 1 red and 1 yellow pepper, diced.
• 1 small carton of passata
• 1 tbsp tomato puree
• 2-4 chopped chillies (depending on taste for heat)
• chilli powder (depending on taste for heat)
• Maldon salt and freshly ground pepper
Method:
• Preheat oven to 180°C.
• Take the tomatoes off the vine and dice them up into quarters. Place them into a roasting tin with the garlic, olive oil, & basil. Place into the oven for 30 – 45 min until roasted and soft.
• While the tomatoes are roasting gather the rest of the ingredients (except the passata, tomato puree, vegetable stock & chilli powder), place into a pre-heated frying pan and cook until soft.
• Add the frying pan ingredients to a large saucepan, along with the roasted tomatoes, when cooked.
• Add half the vegetable stock and simmer for 30 – 40 minutes.
• Use a blender to puree the soup, then return to the heat.
• Add seasoning, extra chilli powder for personal taste.
• If the soup is too thick then add the remaining stock for your preferred consistency.
