Nagoya is the capital city of Aichi Prefecture. It’s the largest city in the Chubu region and the fourth most populous city after Tokyo, Yokohama, and Osaka. Vehicle company Toyota’s headquarters is in Aichi Prefecture. They’re also known for their cuisine, Nagoya meshi.
Here’s the list of Nagoya meshi. We didn’t get to try all of it, but we were able to taste a good amount during our limited stay.
Tebasaki: seasoned, deep-fried chicken wings without batter
Miso Katsu: Tonkatsu, deep fried pork cutlets, with deep miso sauce
Kishimen: flat udon noodles
Taiwan Ramen: spicy ramen w/ minced pork. It was originally created by the local Taiwanese restaurant, Misen. It started as the dish they served their employees.
Hitsumabushi: rice with grilled eel dish comes with various condiments and soup stock.
Miso Nikomi Udon: udon noodle soup with miso-flavored dashi broth.
