  1. "buko" means coconut, buko-pandan is coconut and pandan together. the jelly in the drinks are called "gulaman", so if you see buko juice all around the philippines, it just means coconut juice

  2. Siu yuk is called Lechon macau in the Philippines. We have our own local Filipino-Chinese restaurants with Hispanic names for some of the Chinese dishes, hence lechon macau for siu yuk. So we don't call it siu yuk, we call it either lechon macau, lechon kawali or roast pork. Salcedo market really started for the expat (and rich) crowd that lives in the Central Business District of Makati so you will see more international and modern/fusion Filipino food. Their prices are also geared for expats plus maybe inflation, that's prolly why you're over the USD 10 budget.

  8. Practically all provinces have their own version of longganisa. The most popular ones are Vigan, Lukban, Alaminos, Baguio and Cebu. What you ate in Ineng’s is probably a Hamonado longganisa, which is ham-like (sweet). Recado longganisa, on the other hand, is garlic-flavored. Hope you get to try different longganisas 😊

  9. I've never tried longganisa on a stick. It's usually too flavorful to eat by itself. We normally eat it as a silog woth fried rice and fried egg.

  12. "Buko" means young coconut with chewy meat, as against "niyog" which is the mature ones with tough meat. Niyog is where juice is extracted for cooking.
