Mazesoba Sakaba STAGE is a relatively new addition to the ramen landscape in Tokyo, having opened in June of 2021. The term “Sakaba” (酒場) literally means alcohol place (or sake place), from which you can probably deduce that STAGE is trying to combine great mazesoba ramen with the potential for a drink or more. So instead of pushing people to eat as fast as possible and then get out of the ramen shop, Mazesoba STAGE is actually inviting you to remain for a while and have some drinks and other items from their snack menu. It’s definitely one of the few shops that tries to combine ramen and bar, so if you are searching for this combination, you are in luck.

  1. Thanks for watching! I hope you also enjoy these kinds of alternative styles of ramen. Let me know in the comments if you want to see more soupless styles of ramen or prefer to see regular soup-including ones.

  2. The concept of this place is interesting, but the business model is even more fascinating. Can these dudes really make it with a large space paying tokyo rent, that close to shibuya? Who knows. That being said, the bowl visually looks very good. I think the meat in the bowl would be roasted glazed or marinated pork shoulder, but probably overcooked.
