The owner deep fries all the meats (chicken, pork, etc), and just let them sit idle until customers arrive. Wouldn’t the deep fried foods be cold and soggy when served ?
That's a really good idea, to wash off the store bought unagi that comes with cheap tare so he can put on his own, better tasting tare. I'm gonna do that with the frozen unagi at my asian store

近所なのでランチに奥さんと行ってきました。かき揚げはサクサクでコスパも最高。定期的にいかせてもらいます。
