Pardon my ignorance but what's inside the gyoza at this restaurant? At my local Japanese place they have gyoza with several different fillings. What's generally the standard gyoza filling in Japan overall?

I ate there and their gyoza is out of this world delicious. I said that because the Gyoza I had been eating all my life prior to visiting Japan, was nothing like it. The Gyoza they serve here didn't have that weird herb flavor that leaves a nasty aftertaste. I never thought gyoza would be special but this one was delicious. I really recommend that anyone traveling to Japan (maybe next year?) would try this out.
Gyoza (餃子, gyōza) are dumplings filled with ground meat and vegetables and wrapped in a thin dough. Also known as pot stickers, gyoza originated in China (where they are called jiaozi), but have become a very popular dish in Japan. The typical gyoza filling consists of ground pork, nira chives, green onion, cabbage, ginger, garlic, soy sauce and sesame oil, but some creative gyoza shops have also come up with a range of other fillings.
