I’m curious, was the sauce on the sweeter side? Both soba dishes looked amazing as well. I’m just bummed that those loud people drowned out your voices. I’ve never heard of ground walnuts in soba tsuyu. It truly looked interesting. I love adding karashi to my tsuyu. Soba tabetai ne! Thank you for sharing Day 1 of your birthday adventure!   4. Great video. But after watching your Amsterdam short do you find Americans of Japanese loudest, using there outdoor voices in restaurants? At times in both videos I had to rewind to hear you over the background.

  5. See how Satoshi doesn't immerse the soba entirely into the tsuyu (dipping sauce) ? This is the way most Japanese eat soba because the tsuyu is strong, and you still want to taste the noodle flavor.

  7. When in Rome, eat the pasta. When in Nagano, eat the soba. It looks delicious. Many shops including the one you visited serve hand made soba ( 手打けそば).
