people who never work as a line cook in a busy restaurant wont understand how stressful and high tension the job is. you need to be fast and precise, taste and placement of everything especially since you have a lot of hot oil and stuff around you and the place usually small and working with 2 or 3 people. it's fun but stressful. still better than an empty shop. nothing more hurtful for a chef than throwing away food cause no customer. its the worst feeling.

Bloody hell. The video was only 6 minutes in and I had this huge urge to eat his fantastic ramen. Pity I live in NZ. So very unlikely I’ll visit. I will just have to keep eating my ramen from the 'average and bog standard' franchise vendors around Wellington. Excellent video by the way. Please keep them going. ps the music towards the end has a similar theme to the Amazing Race. Very very appropriate – the chef and his cute team are amazing – and what an excellent philosophy he has, spoken where he talks about wanting to meet and serve his customers future children. Save this chaps DNA. Future civilisations should have a thread or two of his DNA inserted into their genomes.
