Mergim has some difficulty adjusting to this novel dining experience, but he perseveres in trying all of the traditional ingredients, such as grilled meats, fried fish, and steamed vegetables.   7. Alamang is baby shrimps. Bagoong is frome small fish called dilis..the proper name of those is bagoong na alamang ( shrimps) bagoong na isda made with fish or dilis.

  8. As far as i know, Alamang is also a type of Bagoong as it is also fermented. So it's Bagoong Alamang. While the other one is fish Bagoong… I'm glad you've been introducing Mergim to more Pinoy food. Coz i don't think he's a big fan. Though i remember when he went back to Thailand after his first trip here with his (ex) gf, he ate at a Pinoy restaurant there and he seemed to have really liked the food that he ordered. But i guess still not as much as he likes Thai food.

  16. not all bagoong is from batangas. most regions in Ph has it. like us, from northern province, also have our bagoong.. the usual opaque brown liquid and another one we call "padas"

As far as I know there are 2 kinds of Bagoong so there’s Bagoong Isda (fish paste) which Bagoong Balayan is (made in Balayan, Batangas) and there is also Bagoong Alamang (shrimp paste)…Sometimes they just call them in a different name because they want to highlight where they are made from (area) and also different provinces/areas have different recipes or how they make it. So, Bagoong Balayan is actually really just a kind of Bagoong Isda.

  20. Bagoong Alamang is shrimp paste hence the name alamang. Since your in the north Bagoong Isda is what the other bagoong is called and its named that way because its made out of fermented fish while alamang is fermented shrimps.

  21. "Bagoong" is the process name on how it fermented . "Alamang" is the name of the baby shrimps.. Thats why its called "bagoong alamang" for baby shrimp or "bagoong isda" if the they used fish..
