Our second of two breakfasts we enjoyed at “Ayana” Restaurant (アヤナ) at Sankara Hotel & Spa Yakushima (sankara hotel&spa 屋久島), a top-notch boutique Auberge luxury resort hotel located on the idyllic island of Yakushima (屋久島) in Kagoshima Prefecture (鹿児島県), Japan. This is not your typical breakfast spread. It’s an innovative and delicious mix of French-Japanese fusion dishes using local ingredients. The bread was very good – especially the Green Tea bread – and the Eggs Benedict was cooked to perfection. The Mackerel (鯖 – Saba) Curry was very good, too. It was flavorful yet not too heavy, so it worked well for breakfast.
