The crab cake was a crab korroke (Japanese croquette) and itโs not dough but mashed potatoes in the filing.

Tuna has different colours from the same fish. Usually.the belly is lighter and whiter in colour as it has a higher fat content. Love your Japan series as I am half Japanese myself. Any plans to go to India?
The Japanese have a strange obsession with croquettes which is what you ate near the end. It comes from the French. Basically mashed potato mixed with whatever you want then formed into a shape and coated with breadcrumbs and deep fried. Can you tell I'm a chef! lol Happy Travels
