Not sure if the smoke is a new thing(seems like it is). I suspect your injectors might be beginning to give a poor spray pattern. (Because of the smoke at no load revs). The smoke at sea trial could be overloading from bottom growth. Do both engine smoke at the same speed. That also supports overloading. My Yan 3GM is a 3600 rpm engine….. it smokes like that at around 31-32. (Smoked lower speed with more prop pitch load). I am not sure if this is helping(I don’t want to armchair QB your decisions)
Regardless bottom line your exhaust is probably in need of renewal. (Due to age) I recommend years (8) no more. I have seen a 10 year old engine fail because of this part failing (Nordhavn wing engine) with 35 engine hours. Ruined the engine with sea water intrusion. That said, check out these guys

Thanks for the video. I just replaced my Yanmar mixing elbow, and the Yanmar guy said the same thing .. every 3-5 years. He also said that they are almost impossible to clean and showed me one that had been taken apart. I believed him after that. I believe the nipple is threaded both ways so it can screw on properly, left on one side and right on the other. But don't quote me on that….

MIne got clogged where the water goes into the elbow to mix with the exhuast. Very important as you know…when you first start the engine always make sure you have water coming out. Anyway…. I had the same issue you guys had where that elbow wound not thread apart after several years. I took mine and let it sit in vinegar overnight and then with a flexible wire brush…..I went to town. the vinegar loosen up all the soot , so after I scrubbed really hard…I hit it with a garden hose….. wala! I was done and good as new. Yes the elbow has some rust in it from all the years, but until that thing cracks and leaks….a good cleaning works for me. Those yanmars are pretty bullet proof. Just have to do maintenance.
Sometimes when you start to get diesel engines that are getting smoke it can be clogged fuel filter and it's not getting enough fuel to burn appropriately . also if you have the ability to look at the fuel pressure going to the injection pump make sure that you are getting significant and appropriate fuel pressures to the injection pump. If the pressures are too low it will have the engine burn run poorly and shortage of pressure can damage the injection pump and ruin it. The injection tomp needs an excess of fuel being sent to it for cooling and lubrication and then the extra is sent back to the tank. Check with UN mar as the injection fuel pressures are appropriate

The unburned fuel suggests the Injectors not spraying correctly, but then I expect bad Idle too. Then there is the issue in both engines, that is just to much coincidence. Bad fuel? … Nice puzzle, Hope to see the answer soon.

It is likely your exhaust manifold is in a similar state. Cylinder head – let’s not go there.

Agreed. Injectors. Bits of rust and debris will cause a bad spray pattern and lead to heavy black smoke and carbon buildup, especially at high RPM's and under load. Have them cleaned and pressure tested and then reinstall with new injector seals and the problem should go away.
A clogged air filter would also cause black smoke, but you already checked that.
