Our first of two breakfasts we enjoyed at “Ayana” Restaurant (アヤナ) at Sankara Hotel & Spa Yakushima (sankara hotel＆spa 屋久島), a top-notch boutique Auberge luxury resort hotel located on the idyllic island of Yakushima (屋久島) in Kagoshima Prefecture (鹿児島県), Japan. This is not your typical breakfast spread. It’s an innovative and delicious mix of French-Japanese fusion dishes using local ingredients. The bread was very good, and the Ham, Egg, Cheese and Spinach Galette (ガレット) was spectacular.
