Marinated Eggplant/Aubergine 07:29
Ingredients – Serves 2

1 large eggplant
4 tbsp EV Olive oil + 2 or 3 tbsp if needed
2 tbsp of vinegar balsamic or white wine vinegar + 2 tbsp if needed
3 cloves of garlic, skinned and sliced into two
Fresh mint, parsley or basil leaves
Salt

Slice the Aubergine, 5 mm (1/4 inch) thick
Place them on a hot griddle pan. Turn them over and when soft and nicely grilled set aside to cool.
Place them all in a in a bowl.
Pour on the top 2 tbsp of EV olive oil and add the garlic
Add a pinch of salt or more, depending on taste, then 2 tbsp of vinegar
Slowly toss the slices then add the rest of the EV olive oil and more vinegar and salt if needed.
Tear the fresh mint leaves with your hands and add them.
Keep tossing slowly until you see that the eggplant slices well coated with the oil.
Cover and let it rest for a few hours. If you leave over night it is even better.
Marinated eggplant/aubergine makes a very good antipasto or a ‘contorno’ (side dish), great with cold meats or grilled fish but they are very good as a light summer lunch with a slice of fresh bread.

  1. Going to try the Mint with the melanzana, usually use parsley with the oil and balsamic but that seems nicer for flavour.

Years ago when I arrived for the first time in Bagni I did not realise that the name referred to the whole Comune with its many frazioni and so spent ages trying to come to terms with the fact that I lived in Bagni di Lucca but was some distance away from the valley in Frazione Pieve di Controne. Friends visiting were told to make for Pieve … Thank you for the video on the baths which it is good to see are operating. I have only been once many years ago and maybe not at the Bernabo as I cannot remember (was there another?) and had a sort of natural steam bath and was then wrapped in towels by attendants and put on to a bed and told to lie still for half an hour to gradually cool down. The whole experience harked back to the idea of the Roman bath experience, at least in part, and knowing that the Romans had used the same waters made it particularly special. Recommended. The melanzane dish will be next on my list and tomorrow I shall source the vegetable and mint and make it although there will be alas no lines as the griddle departed the kitchen a move or two ago.   3. Ciao Celia ed Enzo! I finally have time to comment as it’s the queen’s bd long weekend (in most states & territories of Oz…). I’ve watched all your vlogs and enjoy your yt channel (except for the sound quality – you lovely people need a couple of microphones 😉) My family & I have been fortunate enough to have stayed in both Naples & the old town of Lucca – but we did not venture beyond it’s walls, so I watch with great interest and with a deep longing to return. My husband, my 22 yr old son & 18 yr old daughter benefit greatly from your cooking demonstrations except that I try & cook seasonally so I’m always 6 months ahead or behind – depending on which way you look at it 🙃 Having said that I’m sure I can source the ingredients for today’s recipe 😋 Grazie mille for sharing all that you do. ☮️💟

  7. Those marble baths, spa and wonderful ceilings are beautiful. It’s so important to keep the traditions alive, the thermal waters, could ( should) if financially valuable, used in winter, for a district heating system, in the nearby villages and businesses.free heating. Just a thought. 👍🏼
