Kō in Maui, Hawaii serves ahi tuna that’s cooked on a 700 degree lava rock. Diners get their own table-side stone called an “ishiyaki” to cook the tuna to their liking. The restaurant’s ingredients are all locally sourced and indigenous to Hawaii.

  2. Perfectly good way to ruin sushi-grade tuna by overcooking one edge. Just eat it raw, dip in with some quality soy sauce & spices/wasabi..
