Hiroshima’s okonomiyaki is its best known regional specialty. A savoury layered “pancake” of noodles, cabbage, pork and many other ingredients, it’s a must-try for any visitor to the city.

In this episode I visit Yagenbori Hassho – known to locals as the famous “Blue Hassho” – which many say is the city’s best, and learn how to eat okonomiyaki like a Hiroshima local.
