hate to break it to you folks, that noodle stretching isn't any different from handle pulled noodles that you can do at home. the reason they do it that way is to increase production before machines came along

In Pg (Penang), Malaysia, we also use this noodles (we called it mee sua (Hokkien) here) for frying
I can only imagine the dirt, fungus, cat crap, and bugs that get on the noodles when stretched outside on the patio. The food is probably pretty good if you don't mind the snotty texture and if you don't think too much about what you are eating.

It was interesting to see how those thin mian xian noodles were made. And, how they looked once served. It's interesting too, given the care and precision required to make them, that the noodles get so little spotlight at the end. They're embedded into that thick, gloopy broth and become texturally lost. But, very interesting. Also, in Southern China and Hong Kong, there is something called "ox tongue pastry." It's similarly shaped, more plump however, is doughier, and is kind of like a youtiao, the famous Chinese fried cruller. It's eaten, I'm assuming, much like a youtiao.
