たくさんのコメントや質問をいただいているので、レミさんや福岡の屋台についてお話します。
レミさんは20年前に福岡に来て、福岡の屋台の文化を知り、自分で屋台を経営したいと考えました。
その当時は外国人が屋台を開業することが法的に難しかったため、レミさんは福岡市内でフランス料理のお店をオープンしました。
2000年代には、福岡では不法営業や騒音の問題などから、屋台の新規参入を認めないなどの行政による対策が行われました。
これにより福岡の屋台文化は衰退し、店舗数も激減しました。
そんな中、2011年に現在の福岡市長である高島氏が「福岡に屋台文化を残したい」と発言し、
排除ではなく地元との共生を目指して、屋台に関する法整備などが行われました。
現在、福岡の屋台は公募制となっており、すべて市の管理下において営業されています。
天神地区では屋台営業用に水道やガス、電気も設置されています。
食べ物や水は、保健所の設ける基準をクリアしています。
レミさんは市の公募に正式に応募して認定されていますので、不法営業ではありません。
屋台の営業時間については、17:00~4:00の間のみと決められているため、
お店は毎日組み立てと片づけを行わなければいけません。
屋台は福岡で最も人通りの多い大通りの歩道にあるため、夜間のみの営業になります。
「自分のお店を持つべきだ」とか、「店舗借りた方が安いだろ」というコメントをいただきますが、
レミさんは屋台のオーナーになることが夢でしたので、彼はその夢を実現しているということです。
理解できないといったコメントもありますが、人生は人それぞれだと思います。
やりたいと思ったことをして、毎日が幸せであること。
それが人生で一番大切なことであると思いますし、この動画でもそれを伝えることができれば幸いです。

After ~5 years of doing this he will be extremely good at setting up restaurants. Because he sets up everything every day, over time he will optimise all his resources and processes to the max. It doesn’t even matter if he‘s a good cook. The good cooks will want to work with him. When I see this I wish I had a few hundred or thousand bucks to spare every month, so I could support him. And when he goes big, he might remember his most loyal investor…
I love the sound of his stall like a steam engine on footpath.

it is an insane amount of work preparing and setting up a stall every day…
屋台を利用する客層の多くはフレンチに馴染みがないと思うから、なかなか集客難しそう…。
フレンチ好きなら雰囲気も含めて店舗利用するだろうし、屋台という独特の空気とフレンチの融合を日本人に受け入れてもらうには、
相当な苦労と努力と年月が必要な気がします。
ようやく観光客が戻りつつありますし、頑張っていただきたい。

それにしても設備が店舗並みですね、換気扇や給湯器やレンジまであるとはすごい
自分の店でやればこんな重労働をしなくてすむのに、それでも屋台営業に拘り毎日屋台を設営・調理・接客・収納するフランス人に我々が出来る事は簡単だ
