You missed Isshin Ramen, I was actually there in October this year.
I too went on a ramen mission and by far Kenzo Ramen, IMHO, in Mississauga (everything made by hand daily) followed by Isshin Ramen, then Santuoka are tops. I'm sure nothing compares to what Japan can offer but all things considered in what I consider to be one of the best food capitals of the world these would be my top choices.
Great video, Chef! I've been a follower for ages and since I got to Canada in April for working holidays, I've been working on the line in restaurants in Vancouver, Tofino (at Shelter) and now Banff. Always so sad, I wouldn't get the chance to meet and chat. Seeing you now walking around in a Shed shirt just kills me haha
I'll say this, if you live in Toronto, and Jamaican or Trini aren't in your top 3 must-have cuisines in the GTA, you've messed up.

My favorite ramen/Japanese restaurant is Kiu Japanese Cuisine in Downtown Markham 169 Enterprise #2nd
Kyu near union has awesome Ramen in 6 different styles including dipping hot stone Ramen and it's super affordable for such a high end restaurant

I would say Japanese, Chinese, Korean, Polish, Chinese, Portuguese, Indian, Persian, Turkish, Mexican, Italian, French, Hungarian,Jewish favourites, German, Finnish, Belgian, English, Spanish and yes, Canadian – but that is a melange of many cuisines including Native American and so many others.
