  1. you don't have to break the shell ………… ask them to look at how japanese or chinese chef pull the meat out without breaking the shell

  5. The cutting board is covered with black fungus – this is already dangerous for health! At night, leave the board dry and sprinkle a lot of edible salt, it will kill bacteria.

  7. Wow. If you are still in NYC, you should film two places. One is the vegetarian restaurant on Mott st in Chinatown that sells "shrimp" and "chicken" dishes that are really all mock-meat, and the other one is the place I cannot remember the name of that serves a full course Fugu meal with Fugu sashimi and the rest of the fish cooked in a stew. The last time I went to NYC I absolutely insisted on taking the people I was with to the other side of the city to eat at these restaurants and afterwards they realized why, they are both amazing in their own right.
