Hakone Suishoen (箱根翠松園) is a luxury Onsen (Hot Springs) Ryokan in Hakone, Japan, that serves up incredible Japanese Kaiseki cuisine. This time, however, we elected to go for the Teppanyaki dinner. Explanations of each serving were in Japanese, so I’ve done my best to translate it into English here:

COURSE 1 – ZENSAI (前菜 – Appetizer):
* Daisen Jidori, Foie Gras, Plum to Pistachio no Galantine (大山地鶏, フォアグラ, プラムとピスタチオのガランティーヌ – Daisen Chicken, Foie Gras, Plum & Pistachio Galantine)
– Balsamico Sauce (バルサミコソース – Balsamic Sauce)
– Mustard Sauce (マスタードソース)

COURSE 2 – SOUP (スープ):
* White Aspara Puree no Yofu Chawanmushi to Royale Consomme Soup (ホワイトアスパラのロワイヤルコンソメスープ – Savory Egg Custard of White Asparagus Puree with Royale Consomme Soup)

COURSE 3 – TSUKURI (造里 – Sashimi):
* Tai no Kobujime (鯛昆布〆 – Konbu Sea Kelp-cured Japanese Red Sea Bream)
– Tai no Nikogori (鯛煮こごり – Jellied Broth of Japanese Red Sea Bream)

COURSE 4 – SAKANA RYORI (魚料理 – Fish Dish):
* Chiba-san Ise Ebi (千葉産伊勢海老 – Ise/Spiny Lobster from Chiba)
– Ebi miso, American Sauce to White Wine no Sauce (伊勢海老味噌, アメリカンソースと白ワインのソース)

COURSE 5 – SHINOGI (凌ぎ):
* Ryokucha Sorbet (緑茶ソルベ – Green Tea Sorbet)

COURSE 6 – NIKU RYORI (肉料理 – Meat Dish):
* Iwate-san Tokusen Kuroge Wagyu no Sirloin (岩手産特選黒毛和牛のサーロイン – Kuroge Wagyu Beef Sirloin from Iwate)
* Wagyu Hamburg Steak to Demi-Glace Sauce (和牛100%ハンバーグとアンチョビソース – 100% Wagyu Hamburger Steak with Demi-Glace Sauce)

* Chiba-san Iki Awabi, Anchovy Butter Sauce (千葉産活鮑, アンチョビバターソース – Live Abalone from Chiba, Anchovy & Butter Sauce)
