This week, Shizuka travel to Okazaki, home to a unique type of miso. Hatcho miso, a dark red miso with a strong taste and history, can be incorporated into a myriad of classic Japanese dishes. Touring the Kakukyu Hatcho Miso village, Shizuka learns how this miso is made, and of course, tries the many tasty foods featuring Hatcho miso.

  2. Miso must be different than miso you get in local North American sushi place… Miso for me is salty soup, sometimes with tofu bits or seaweed bits bonus. But, usually salty, murky, watery soup. Shizuka is amazing, she can make drinking tap water seem deliciously exciting experience.

  4. This was a very interesting episode explaining the process to make traditional miso. I just find what you post to be so interesting and to see some incredible recipes made from miso. The best was the miso ice cream what a strange combination but obviously works together seeing you thoroughly enjoyed it. Can not wait to see what you have in the next video. If I recall, Yuba is actually the skim from the top of heating of soy milk (analagous to scalding cream), not necessarily anything to do with Tōfu… excellent to still see traditional miso production still being done⁉️ I’d like to know how old some of their aged misos are❣️❓I remember old farmers in akita and aomori with their homemade farmhouse miso, sooo delicious and the aroma, much like Hatcho Miso‼️ Actually brought back several large tubs home with me x lasted near on years…
