  2. when ground meat is packaged, the meat on the outside is exposed to more oxygen. That's why meat turns a bright red color on the outside while the inside remains brown.  
    When myoglobin is mixed with oxygen it becomes oxymyoghobin, or more commonly knon as "blooming". If the meat on the outside looks brown or grayish brown it is starting
    to spoil.

Proud born and raised Chicagoan here , i can tell you without a shadow of a doubt the Chicago burgers are some of the best in the country, The Loyalist Burger was rated #3 in the entire country not long ago , Small Cheval , Kuma's Corner , Bad Apple , Little bad wolf , Kitchen Barrel , Au Cheval ect .. people here don't eat McDonald's or Burger King , you have these burgers all these other fast food burgers are trash !
