Motsunabe is a popular hotpot dish from Japan, whose primary ingredient is beef or pork tripe or other offal. The soup base usually contains soy sauce with garlic and chili pepper, or miso. Champon noodles are often added to complete the dish. Originally popular in Fukuoka, in recent years the dish has gained popularity in major cities like Tokyo. Motsunabe remains a favorite amongst Japanese because of its hearty, warming qualities that is particularly great when shared amongst friends.
