  2. Recipe
    250g cream cheese
    36g butter
    45g whipping cream
    39g milk
    Melt all of these ingredients until well combined.

    3 egg yolk
    20g corn starch
    1tsp lemon juice
    Mix egg yolks into the first batter, add corn starch and lemon juice. Mixture would be a little bit thicker here.

    3 egg whites
    63g sugar
    Beat until soft peaks.

    Fold the egg whites into the cheese batter using fold in method. Bake in ban marie for 1 hour at 140celcius. Line the pan with baking paper all over inside it.

  3. Had one tonight. Ohhh I’m going to miss you. Warm fluffy and one of the best cheese cakes I’ve ever had. Hopefully I will eat 3 more before I leave japan.

  4. I MADE ONE! It has a really strong egg flavor but it is kindof fixed with the creamcheese. It looks jiggly when you take it out the oven but deflates later on sadly.

  5. Tried something like this at a Japanese patisserie in Central London recently. So nice. Not too sweet. Really worth trying.
