I might steal some of your recipes haha. They look so good, and I should probably make an effort to eat a bit healthier too 😅.
I have a recipe which might be good for this too. I sauté some garlic and onions, some eggplants (optionally), chicken thigh (chicken breast or even tofu are probably better from a health perspective…) and green beans (long beans are better, if you can find them 😅). Once they are mosly cooked on the outside add some water, bagoong or fish sauce, some bullion powder/cube (but make sure not to make it too salty xD), coconut milk (or a healthier alternative. Coconut water and a slury after everything is cooked might work), cane vinegar, some brown sugar, and some chilli powder if you like it spicy. Once the chicken and the vegetables are completely cooked and the liquid is reduced it's done!
It's really nice to see you getting healthier without forcing yourself into a very restrictive diet you hate! 🙂 Besides the weightloss you also look happier overall 😀
