God bless you and your family
Native Southern Californian here, who has also lived in Northern California, now living in Utah who has explored most of the western USA – I guess it's just opinion, but I'd pick Knott's Berry Farm over Disneyland, and would also not skip the San Diego Zoo and/or Safari Park (would do at least one of those). After So Cal I'd hit Sequoia National Park, then Yosemite National Park, then Lake Tahoe, and then head over to the Bay Area and wine country (Sonoma, Napa). Near San Francisco (my favorite big city ever), I'd go to Muir Woods National Monument for redwoods. I'd also include Point Reyes National Seashore. Going north from there is awesome – Fort Bragg, Willits, etc. Although if you don't have time, you won't regret going south along the coast (Monterey, Big Sur) and back to LA if that was your starting point.
