フランス料理人です。
前掛けやエプロンを付けずにあれだけ仕込みをして全く服が汚れていないのは本当にすごいです。
本当に綺麗な仕事だと思います。
So many restaurant operators and their suppliers as he said are getting older and have begun to retire. Even my neighborhood Chinese take out place closed up two of their stores not because they weren't getting customers, but the fact that their lease had came up and they admitted to me that they had started the business for their kids. Now that the kids are older, they don't want to work so hard and want to start figuring out the next chapter. As much as they hated to close up shop at two of their locations, they aren't getting younger and the work is becoming more tiredsome. They never intended the restaurant to be passed onto their kids because they always thought of it as simple work and wanted their kids to have a better life, and they did. Their kids went to college graduated and have good paying jobs that are not very manual/pysical labor intensive. In that vein, they have succeeded. However, who will take up the mantle of these and so many other small restaurants and take out spots when less and less people are choosing to open restaurants or even have an interests to learn from the masters….
Watching videos like this impresses me, saddens me, and scares me…. :-/
