  1. So it only got its star because it's barely Filipino food lol.

    Just accept it guys, these pro chefs will never accept our food as high class. Even Filipino chefs trash our own food. Sad but that's the reality.

    I still enjoy Filipino food compared to western food. But then again, I'm not obsessed with different pastas, breads or steaks(rare would be the death of me lol). But japanese and japanese fusion is still top tier.

  2. I don't recognize this food anymore lol. If filipino food has to be transformed into this unrecognizable bite sized dishes to get a michelin star, then they can have their star. I'll stay with my authentic filipino food complete with extra rice and in big plate servings. Boodle style on banana leaves, even better!

  3. Nope. I wouldn't call this filipino dish. I'm filipino. I can't even recognize it. I would rather call this filipino inspired or filipino fusion, but definitely NOT a filipino dish. Don't get me wrong, I'm proud of what they done in Kasama. And i would like to taste all that dish.

  6. The desert was the only recognizable food here. Most were too elevated for us locals to know but they seem delicious.

  7. Metiz and Hapag are also amazing restaurants that have menus that evoke nostalgia from reference points that are undeniably and unapologetically Filipino. The Michelin may not make sense here in the Philippines but there are chefs here who execute at that level. I miss Chicago and I'm so stoked we have such amazing talent doing awesome food

  8. to be honest… I felt embarrassed that you were served those small portions.. not Filipino at all. Glad to have read from one of the comments that this was a tasting menu. It's a nightmare if these were the regular servings sold for hefty price because of a Michelin star. Congrats on that star though… And thanks for appreciating Chen Dynasty hehe Mike.   9. Filipino food is basically food for the masses so I won't be surprised why our local restaurants doesn't have any Michelin rating

  11. 10-20% filipino concept, every dish looks completely different. I adore the teams passion of making those dishes, but branding it as a filipino Michelin star restaurant doesnt make sense to me. Ive been working in hospitality industry for couple of years, im not trying to be smart here but you cant call it a filipino dish if you only use small portion of idea out of it. Don’t use the word filipino inspired dish if its not a filipino dish itself. BTW Its just my opinion and everyone got their own.

  13. No wonder the restaurant earned a Michelin star. The food are not Filipino at all. While it’s sad to say, I don’t really care if genuine Filipino food is not Michelin worthy. I’ll go insane if I go an entire week without my Filipino breakfast tapsi/toci/longgasilog with a variety of Tuyo.
    Wagyu is unheard of in normal Filipino meal unless it’s a very special occasion.
    I think the restaurant has a Filipino inspired menu with about 25% authenticity to it.

  14. it should be the ony michelin star filipino-owned restaurant. aside from the saba and maybe halo-halo, all dishes are just filipino inspired dishes.they are very far from being filipino dishes. what they have done is basically like the afritada, kaldereta, mechado argument. they are similar to one another but you cant say that an afritada is the same as a kaldereta just because they look the same.

  16. They only have 1 star because the portions are still large. They should make it smaller with even bigger plates. A5 wagyu, caviar, salmon, squid ink pasta, that is not filipino food anymore.

  19. This is nothing like Filipino food. Lol. But that's how it is..you gotta do what you gotta do to make it appetizing to the Western palate. 😂 Making me hungry. The kare kare was funny. Filipinos cant eat just one small piece of that. 😂
