Frank visits another Tokyo ramen shop, this time for Fukuoka-style tonkotsu ramen at Yama-chan! Yama-chan started as a tonkotsu ramen stall in Fukuoka. They serve Nagahama ramen, which is characterized by their extremely thin noodles, which cook fast so that the workers at the Nagahama Fish Market could have a quick bite before returning to work.

WHAT IS TONKOTSU RAMEN?

Tonkotsu ramen is a pork bone broth ramen that originated in Fukuoka. Tonkotsu ramen broth is thick and rich, with a soy sauce base, and the noodles are generally thin and straight. Usually tonkotsu ramen is topped with mentaiko, spicy cod roe, another specialty of Fukuoka.

YAMA-CHAN’S TONKOTSU RAMEN

Yawa やわ – soft
Futsu ふつう – standard
Kata かた – firm
Bari-kata バリ- very firm
Harigane ハリガネ – extra extra firm

  1. You've got me craving Hakata ramen now. There's a local chain here in Southern California called Shin Sen Gumi that does Hakata ramen. I haven't gone in probably two years now but when I do go I always order my noodles バリ硬!

  3. I love that Frank brought up the ‘funk’! I’m not a fan of too much funk-some places are so funky i tell people that the ramen is ‘porky’! I had a bowl in Tokyo Station and the porky smell permeated the air-and it was also in the bowl as well. It wasn’t my favorite bowl thats for sure! Another great video-Frank is a Ramen Review master. One of the best! 👏
